INFLUENCE OF IRRIGATION AND NITROGEN FERTILIZATION ON QUALITY OF FRESH AND FROZEN BROCCOLI

Summary

Two years' lasting investigations were aimed at determining the influence of irrigation and fertilization with increasing rates of nitrogen on biological value and sensory traits of fresh and frozen broccoli. It was ascertained that irrigation favourably influenced the colour and chemical composition of roses. Due to this treatment irrigated, broccoli had a more intensive green colour, a lowered level of nitrates and an increased percentage of soluble dietary fibre in the total one. The level of the analyzed constituents in broccoli depended, however, on the nitrogen fertilization rate. The highest contents of ascorbic add, sugars and nitrates was found in broccoli fertilized with a rate of 200, 400 and 600 kg N/ha, respectively. An interaction of irrigation and nitrogen fertilization in determining the colour of broccoli and their contents of ascorbic acid and nitrates was ascertained. The influence of irrigation and fertilization on contents of the chemical compounds analyzed in frozen broccoli was similar to that in fresh one. The experimental factors applied, influenced the sensory traits of frozen broccoli, too.
