CHANGES OF THE FLAVONOLS CONTENT IN ONION DURING THE VEGETATION PERIOD AND STORAGE

Summary

Studies were carried out in 1997-1999 on changes of the flavonols content in onion during the vegetation season and storage. Two onion cultivars (Sochaczewska and Błonska) were used. The level of quercetin and kaempferol in onion bulbs and leaves were investigated separately during the vegetation period. After acidic hydrolysis of flavonol glycosides, their aglycons - quercetin and kaempferol were analysed using a HPLC method. It was found that in onion bulbs, only quercetin was present, whereas in leaves - both investigated flavonols. In the growth season quercetin started accumulating in bulbs when leaves began drying up (August). Further accumulation of quercetin and increase of its content in bulbs was observed after beginning the process of drying onion bulbs and in the first weeks of its storage in cooling room at 0-1 °C. During the last 3-4 months of long-term storage the content of quercetin did not change significantly.
