EFFECT OF STORAGE ON CONTENTS OF DIETARY FIBRE AND ITS COMPOSITION IN SOME CULTIVARS OF RED BEET, ROOT PARSLEY AND CARROT

Summary

Contents of dietary fibre as well as its fractional and carbohydrate composition in red beet, root parsley and carrot were analysed. Differences between cultivars, influence of both root size and shape as well as that of a seven month's storage were evaluated. The contents of fibre and its composition were found to be dependent on factors under discussion. Roots of late cultivars of carrot and root parsley had a more favourable composition of fibre than these of moderate early cultivars. Dominant monosaccharides in insoluble fibre of investigated vegetables were glucose, galactose and arabinose whereas in soluble fibre of red beets and carrot - galactose, arabinose and in root parsley - rhamnose as well. Changes in contents of dietary fibre and in its fractional and carbohydrate composition took place in course of the storage process.
